Traditional cooking over a wood fire using 'equipment' like bamboo, banana trunk, coconut husks and rice husks, and unusual ingredients like wild ginger, are irreplaceable when it comes to authentic Balinese cuisine. For this reason, the recipes in the 'Rare, But Not Forgotten' section are almost impossible for you to make at home. But I still include them as they are very soecial to my heart, and for me, this book would be incomplete if they were missing.
